Prestonfield – Edinburgh
This whisky represents a unique collaboration between Prestonfield House and Norwegian/ Scottish entrepreneurs behind the world’s northernmost distillery — a true Scottish-Arctic fusion. Each release features different barley, yeast strains, and maturation casks. Crafted from Nordic barley, distilled in state-of-the-art stills, and blended with glacial meltwater, this whisky matures in select casks within a Viking longhouse. The Arctic climate, with an average temperature of 0.6°C, shapes its distinctive character. Casks selected personally by James Thomson, Owner, Prestonfield House.
- Released April 2025 at Prestonfield House
- Number of bottles: 400 (2024 edition, numbered)
- Casks: Single cask Sherry Oloroso – blended with some peated Whisky
- Age; 5-6 years
- Taste notes: This Arctic whisky, matured in Oloroso sherry casks with a touch of peated malt, offers a rich and balanced profile. Aromas of dried fruits, warm spices, and dark chocolate lead to a smooth palate of sultanas, oak, and subtle smoke. Hints of leather and roasted orange peel add complexity, while the gentle peat lingers in a long, warming finish. A bold yet refined dram with both depth and character.
the SAUTSO SILVER
This whisky is a cooperation with Aurora and Alten Laksefiskeri Interesseforening (“ALI”), which actually are turning 300 years in 2025. The whisky is partly made with barley from Heimdal Gård in Alta and river water from the Alta River.
We started the “arctic barley project” in 2019 and this Whisky is the first ever Whisky on the market where we are using true Arctic matured barley – the northernmost barley in the World (!). (It is actually not physically possible to produce any barley further north).
The Whisky is a tribute to the Alta river and the salmon in that river. Since 1725, “ALI” have stood steadfast by the Alta. through flood and frost, through courtrooms and conflict. Not for glory. Not for gold. But for the salmon — wild, unique , irreplaceable.
