MYTHOLOGY
In Norse mythology, Yggdrasil is a mighty ash tree, situated in the center of cosmos. There it holds the Nine Worlds, which is arrayed around it and held together by its branches. Also as an inspiration for the graphics on Yggdrasil we are using “Runes”; Our viking ancestors had a tradition of erecting rune – stones with inscriptions carved either to remember great men or important events.
Bivrost® Yggdrasil is our first vintage Arctic Single Malt Whisky and deserves nothing less. The inscriptions on the box tells a contemporary tale of Yggdrasil in the actual runic script called younger futhark.
CREATION
Bivrost® Yggdrasil 2024 is crafted at the world’s northernmost distillery in Arctic Norway (69°N). Slightly smoky Nordic barley malt has been brewed with glacial meltwater, undertaken a long complex fermentation and distilled on our sustainable copper still to obtain a fruity spirit. This whisky has aged in Oloroso seasoned and in-house charred casks, stored within our wooden Viking longhouse. Arctic temperature variations impact its maturation, with an average yearly temperature of 0.6°C.
YEAST: Lager yeast (Saccharomyces pastorianus) & Old English ale yeast (Saccharomyces cerevisiae).
MALT: Pilsener Malt, made from Planet and Popino Nordic barley. & Peated Distillers Malt (55 p.p.m).
WATER: Water sourced from Elvejordvannet, which receives melted glacier water from the Lyngen alpine range.
DISTILLED: Distilled in 2018 – 2020, with two active plates in our copper pot/column still. Average distillation time ranges between 8 – 10 hours, average strength heart collected of undiluted new make is around ~75%abv.
CASK HANDLING: Yggdrasil was matured in Oloroso seasoned and in-house charred casks. Maturation age varies between 4 to 6 years.
Colour: Amber
