We release a limited 3 casks of Bivrost® Whisky per year for private ownership. These are exclusive, handpicked casks which can be purchased by privates or companies. Join our waiting list to register your interest.
HOW IT WORKS:
Choose your cask
Once our Terms & Conditions are signed, and the payment is done, you are the proud owner of the agreed – upon cask.
Time to mature
Your cask will mature in our warehouse in the Arctic air for up to 10 years in our full size casks.
Visit your cask
Cask owners will be invited to exclusive Cask Owners Events and will be able to sample their maturing spirit at set times agreed with the distillery.
Bottling
We will bottle your spirit at standard industry bottling rates. The bottling can take place in UK or any other agreed – upon place.

2024/176 – OLOROSO 250 L.
Crafted by the renowned Tonelería J.L. Rodríguez, this 250-liter Sherry cask embodies Spanish tradition and excellence. Made from American oak, the cask has been seasoned with Sherry Oloroso wine, infusing it with rich, nutty aromas and a deep complexity that enhances the aging of spirits with layers of dried fruit and subtle spice.
The barley that was used for the New make is Maris Otter, from Crisp. It was fermented with Brewers yeast and distillers yeast.
PRELIMINARY TASTING NOTES:
Nose: Rich malt backbone (Maris Otter shines through). Dried fruits (raisin, fig) layered over honey and biscuit. Light nuttiness (walnut / almond). Subtle orchard fruit (pear, baked apple) from fermentation
Palate: Full, rounded mouthfeel. Malt-forward core → toasted bread, caramelized sugars. Sherry sweetness balanced by oak spice. Dark fruit richness builds mid-palate. Slight cocoa + nut bitterness adds structure
Finish: Medium to long. Drying oak + gentle spice. Lingering dried fruit and malt sweetness. Slight tannic grip (depending on cask activity)

2024/195 – Sherry Crocodile Charred 250 L.
This 250-liter Sherry cask embodies Spanish tradition and excellence. It has earlier been used for Bivrost Whisky and then re-charred on site at Aurora Spirit distillery.
The barley that was used for the New make is Norwegian Frutopia from Bonsak Malt. It was fermented with Brewers yeast and Distillers yeast.
PRELIMINARY TASTING NOTES:
Nose: Burnt sugar / crème brûlée top. Light smoke (not peated — more toasted oak / ember). Dried fruit in the background (raisin, fig, but softer than first-fill sherry). Vanilla + caramel. Subtle red apple / pear freshness
Palate: Immediate sweet entry → caramel, toffee, vanilla. Mid-palate:
Charred oak (slightly smoky, slightly bitter edge), Dark sugar (demerara, molasses light), Dried fruit more restrained, integrated. Texture:
Medium to full body. Slightly more structured/drier than classic sherry cask
Finish: Drying, with: Charred oak, Light spice (clove, toasted cinnamon), Cocoa bitterness, Lingering caramel + faint fruit
